Ingredients

  • Steak
  • Olive Oil
  • Salt and pepper
  • Butter
  • Thyme
  • 2x Garlic cloves

 

Step-by-Step Instructions

  1. Take the steak out of the fridge 20 minutes before cooking

  2. Season with salt and pepper

  3. Heat pan till smoking

  4. Add olive oil

  5. Put the steak on (away for you)

  6. Should hear a nice sear. Use tongs to turn the steak over. Within 30 seconds should be seeing the color

  7. Render down fat on the edges. Tilt the pan as you’re doing this.

  8. Add a couple cloves of garlic. Don’t need to peel. Just lightly crush and throw in

  9. Add some sprigs of thyme

  10. Add more olive oil if needed

  11. Remember to turn the steak every minute to ensure an even cook

  12. Add a couple knobs of butter

  13. Tilt the pan then baste the steak

  14. Brush the garlic over the steak

  15. If you want rare, it should feel like the palm near the wrist. Medium is the wrist. Well-done is the top of the wrist

  16. When the steak feels done, take them off and let it rest a bit

  17. Done
